    This recipe makes A LOT of lemon blossoms. But if you are taking them to a party/event, they won't last long!

    List of Ingredients




    1 yellow cake mix
    1 small pkg. instant lemon pudding mix
    4 large eggs
    3/4 cup vegetable oil

    Glaze:

    4 cups powdered sugar
    1/3 cup fresh squeezed lemon juice
    zest of one lemon
    3 Tblsp. veg. oil
    3 Tblsp. water

    Recipe



    Preheat oven to 350 degrees.

    Combine cake mix, dry pudding mix, eggs and oil and blend with electric blender for about 2 minutes. (This batter will be very thick).

    Spray miniature muffin tins very well with cooking spray. Pour a VERY small amount in each muffin tin (not even halfway). Bake for 11-12 minutes.

    Immediately turn out onto a tea towel and let cool for a few minutes.

    Combine glaze ingredients and mix until smooth. This makes a LOT of glaze, but it is just enough to cover all the lemon blossoms if you use all the batter.

    Drop the lemon blossoms one at a time into the glaze mixture and roll around with two forks until completely covered with glaze. Allow excess glaze to fall back into the bowl, then place on a wire rack with wax paper underneath to catch the drips. Let the glaze set for about 1 hour, then store in containers with tight-fitting lids.
