    Microwave Banana Pudding

    Source of Recipe

    Local Newspaper

    Recipe Introduction

I was raised on banana pudding. It seemed like Mom made it at least once a week, and it was everyone's favorite. I carried on the tradition by making it for my family, and my kids love it. The only part I didn't like about having to make it was standing over the stove stirring the pudding mixture in a double boiler FOREVER.... Recently, I saw an article in our local newspaper about a woman who has learned to make it in the microwave, and no one could tell the difference. Well... I'm all about quick and easy, so I decided to give it a try. After making a few changes of my own to get it to taste just like the kind I had made for years,.. I have a version that is practically FAIL PROOF! Give it a try!

    List of Ingredients

    1 cup sugar
    1/2 cup flour
    3 egg yolks
    3 cups milk (divided)
    1 Tblsp. butter
    1 tsp. vanilla
    3 bananas
1 box vanilla wafers (has to be Nabisco Nilla Wafers!.. no other kind will do!) :)

    Recipe

Mix together sugar and flour in a Large microwave safe bowl. Mix egg yolks into 1 cup of milk wisking until well blended. Add this to the flour and sugar. Add remaining 2 cups of milk and wisk until well blended.

This is where you need to follow EXACTLY....

Microwave on high for 1-1/2 minutes. Stir

Microwave on high for 1-1/2 minutes. Stir

Microwave on high for 45 seconds. Stir

Continue to cook on high for 45 second intervals until pudding is thick (this usually takes 5 to 6 45-second intervals. Add butter and vanilla.

Layer a large dish with vanilla wafers, sliced bananas and pudding, repeating twice, and ending with vanilla wafers. Cool in refrigerator.
