    Tiny Shortbread/Lemon Tarts

    2 sticks butter, softened
    1/2 cup powdered sugar
    2 cups flour

    1 small package "cook & serve" lemon pie filling (prepared as directed on package)

    Recipe



    In a large mixing bowl, cream butter and sugar until light and fluffy. Gradually add flour and mix well. Shape into 1" balls; press onto the bottom and up the sides of greased mini-muffin cups.

    Bake at 300 for 17-22 minutes. Cool for 15 minutes and carefully remove from pan to wire rack to cool completely.

    Spoon one tsp. of prepared lemon pie filling into each tart. Makes about 3 dozen.

    ** You can cheat and use canned lemon pie filling if you choose.
