Aunt Kathy's Chili
Source of Recipe
My Aunt Kathy in Amarillo
Recipe Introduction
My aunt Kathy makes the best chili. She's also special to me because not only was I born on her birthday, but I got married on her anniversary! I have edited this recipe slightly to fit our families taste, but also because I like to use pureed tomatoes from our garden. I keep these in the freezer and ready to use in soups/chilis.
List of Ingredients
3 lbs. hamburger
3 to 4 cups pureed tomatoes (canned will work)
2 cans Rotel
1/2 cup chili powder (I use hot mexican chili powder)
1 Tblsp. cumin
1/2 Tblsp. oregano
salt (to taste)
2 tsp. minced garlic
1 can pinto beans (drained)
1 can kidney beans (drained)
1/4 cup quick oats
Recipe
Cook meat, and drain. Add spices, tomatoes, garlic, and beans and simmer for 1 hour.
Add oats and simmer 5-10 min.
If you like it hotter, you can always add cayenne.
