2 Tblsp. butter
1 small onion (chopped)
1 cup finely chopped potato cubes
1 stalk celery finely chopped
2 Tblsp. flour
1 can chicken broth
1 cup cream
1 tsp. salt
1/8 tsp. white pepper
2 cans cream-style corn
2 Tblsp. fresh chopped parsley (optional)
Recipe
Melt butter in a heavy saucepan, and saute cubed potato, celery and chopped onion until transluscent. Add flour and mix well. Stir in broth and cream, stirring until thickened. Add corn, salt, pepper and heat to simmering (do not boil). Simmer for 10-15 minutes stirring frequently. Sprinkle parsley on top right before serving.
