If you've ever had the bottomless bowl of tortilla soup at the Full Moon,... you'll love being able to make this yourself.
List of Ingredients
1/2 cup butter
1/2 cup flour
1/2 gallon chicken stock
1/2 tsp. white pepper
1 cup monterey jack and cheddar mix (grated)
1 pint half and half
2 teaspoons diced jalapenos
1 can rotel
1 cup cooked chicken meat (Full Moon marinates chicken in fajita seasonings)
2 to 4 flour tortillas (cut in strips and deep fried)Recipe
In a large stock pot, combine butter and flour and cook over a low heat stirring constantly until mixture is smooth and thickened. Slowly add the chicken stock and wisk until well blended. Add the rest of the ingredients and let simmer for 15 minutes.
To hold: place soup in double boiler over hot water.
To serve: sprinkle individual servings with strips of flour tortillas that have been deep fried. Garnish with guacomole and grated cheese if desired.
