    1 eggplant
    2 egg whites
    1/2 tsp. salt
    1/4 tsp. pepper
    Italian Bread Crumbs
    1 tsp. olive oil
    1 jar spaghetti sauce
    8 oz. grated Mozerella cheese

    Recipe



    Slice eggplant about 1/4" thick. Cover with lightly salted water and soak for 1/2 hour; dry.

    Add salt and pepper to egg whites and beat lightly.

    Dip eggplant slices in egg mixture, then in bread crumbs.

    Fry in olive oil until slightly browned, turning once.

    Remove slices and drain on paper towels.

    In a baking dish, layer sauce, eggplant, and cheese. Repeat.

    Bake at 350 degrees uncovered for 20-30 min.
