Recipe Introduction
Fresh okra grows abundantly in Oklahoma!
List of Ingredients
Pretty simple actually...
Wash okra, and cut both ends off and discard. Slice the okra in approx. 1/2" slices.
While the okra is still wet (and a little slimy -- which helps the batter to stick!), add equal amounts of flour and yellow cornmeal. The amount will determine on how much it takes to coat the okra sufficiently. (just shake off excess before you fry). Recipe
In a large skillet, heat about 1/3 cup vegetable oil to approx. 375 degrees.
Carefully pour battered okra into hot oil and let it fry for awhile right where it lands until it starts to form a crusty layer. Once it is crusty enough on the bottom to flip, start to flip it all to the other side. Then just occasionally give it a flip until all the okra seems to have an even crusty brown coating. If you start to flip it immediately after adding to the hot oil, the batter will start to fall off prematurely.
During the frying process, salt and pepper generously.
