Okra Pancakes

1/2 cup cornmeal
1/2 cup flour
1-1/2 tsp. salt
1 tsp. baking powder
1 large egg, lightly beaten
1/2 tsp. pepper
1/2 cup finely chopped onion
2 cups thinly sliced okra
Recipe
In a medium bowl, combine corn meal, flour, salt and baking powder.
In a 2nd bowl, mix together egg and 1/2 cup water. This this mixture into the dry ingredients. (It should resemble the texture of loose mashed potatoes; if not, add a little more water). Fold in the sliced okra and spoon heaping tablespoons of the batter into hot oil. Fry until golden brown - about 1 to 2 minutes on each side. Use a slotted spoon to remove from oil and drain on paper towels. Sprinkle with salt and serve immediately.
