    Recipe Introduction


    This is a form of rice casserole which you will find on the table of most Nigerians on sundays and is a most cook party dish in Nigeria. From a naming ceremony to a birthday party most of all a wedding ceremony where it takes a festive affair.



    List of Ingredients


    • 1 lb fryer chicken
    • 2 cloves garlic(minced)
    • 1 small piece ginger(minced)
    • 1 small size onion(minced)
    • 1 tbsp black or ground red pepper
    • vegetable oil
    • 250g can tomato&pepper puree
    • 1 meduim size chopped onions
    • 3 cups regular rice
    • chicken stock
    • 5 boullion cubes
    • 50g can tomato puree
    • 2 large pinches curry
    • 2 large pinches white pepper
    • 2 large pinches thyme
    • 3 large tomatoes(sliced)
    • 1 large onion sliced
    • Boiling water
    • salt to taste


    Instructions


    1. Mix the minced garlic, ginger and onion in a bowl. Add the pepper, 2 tbsps vegetable oil and 1 boullion cube to this mixture. Add salt to taste.

    2. Pour this mixture in a plastic pack, put the chicken and shake the bag until the chicken is well coated.

    3. Roast under a medium heat in an open coal fire or broil in an oven at 350F until desire doneness.

    4. Heat 3 cooking spoon vegetable, add the chopped onions and fry, add the tomato&pepper puree, chicken stock and 2 boullion cubes. Cook the sauce until done.

    5. Put some boiling water in a larger pot. Add the sauce, curry, thyme, white pepper, 2 boullion cubes, tomato puree, stock, rice and salt to taste.

    6. Cover the pot and simmer till water is absorbed and rice done. Put the sliced onoins and tomatoes. Replace the lid and reduce the heat so rice can steam up the tomatoes and onions.

    7. Stir rice and fluff with a fork.

    8. Dish rice on a platter and dress with the chicken suya.



    Final Comments


    The chicken could instead be fried after being seasoned.
    This dish could be accompanied with coleslaw or vegetable salad and a glass of orange juice or lemonade.
