GAudrey writes...I often play around with biscuit/scone recipes and come up with different flavor combinations. My DH loves these because they reheat well. He calls them Heart Attack in a Scone.
List of Ingredients
Breakfast in a Scone
2 eggs (may use Egg substitute)
1 tablespoon water
1/4 teaspoon Tabasco
2 tablespoons butter or margarine
2 cups biscuit baking mix (Bisquik preferred)
1/2 cup shredded cheddar cheese or cheese of your choice
8 slices of bacon, cooked crisp and crumbled
1 cup of heavy whipping cream
Dry herbs of your choice
Recipe
Preheat oven to 400°. Beat eggs with 1 tablespoon of water. Stir in Tabasco. Melt butter or margarine in a non-stick skillet and scramble eggs. Remove from pan and cool. Place baking mix in a bowl and add scrambled eggs, cheese, and bacon. Toss to coat with flour. Add cream and mix only until well moistened. Drop by heaping tablespoons onto a greased or sprayed baking sheet. (I use a small ice cream scoop.) Spray with butter flavored cooking spray and sprinkle with dry herbs of your choice – dill, mint, parsley, basil, cilantro, etc. Mrs. Dash has a good selection of blends you may use. Bake until golden brown, about 15 to 20 minutes depending on size. Scones also may be patted out into a circle and cut in wedges to bake to make the traditional shape.
