Peanut Brittle ~The Best~

Peanut Brittle
2 C. sugar
1 C. light corn syrup
1 T. butter
1 t. baking soda
1 ½ C. peanuts (Dry Roasted OK)
I’ve used this recipe for years. It’s wonderful, simple
and always a huge hit!
Have prepared a metal pan that is thoroughly greased
with butter, and a large, sturdy, heat resistant spatula
also greased with butter. In large saucepan, boil
together sugar and corn syrup to hard crack stage
(300°). Remove from pan and stir in butter and baking
soda. Mixture will foam. Stir in peanuts and quickly
spread onto prepared sheet. Use spatula to spread out if
necessary, but you have to work quickly. I use an old
pizza pan most of the time and get a thick brittle. You
can use a short walled 9x13 also.Let cool completely.
Break into pieces. Store in airtight container, with
waxed paper between layers, up to one month. It will
never last that long!
you can add a t. or so of vanilla
if you want when you add the butter.
