BROCCOLI AND HAM CASSEROLE

List of Ingredients
2 T. chopped onion
3 T. margarine - divided
2 T. flour
1/2 ts. salt
pepper to taste
1 cup milk
1/2 cup shredded cheddar cheese
1 bunch fresh broccoli - cooked and drained
2 cups cubed fully baked ham
2 oz pimentos (Creid left these out...)
1 can mushrooms (4½ oz.) drained (I used 8 oz fresh sliced that I sauted a bit)
6 soda crackers - crumbled
Recipe
In a saucepan over medium heat, saute onion in 2 T. margarine until tender. Stir in flour, salt and pepper until smooth. Gradually add milk; cook and stir for 2 minutes or until thick and bubbly. Remove from heat; stir in cheese until melted. Fold in broccoli, ham, mushrooms and pimento. Pour into a greased 2-quart casserole. In a small saucepan, brown cracker crumbs in remaining margarine, sprinkle over casserole. Cover and bake for 20 minutes in a 350º oven. Uncover and bake 5 - 10 minutes longer or until heated through. Serves 6. (You may substitute cauliflower for broccoli or combine and use both.) (I used California Blend...and it was great! Creid)
