    It is very good. Everyone liked it and not much leftover. Of course I didn't have all the right ingredients. I sub cream corn for whole kernel, and used DelMonte Zesty tomatoes with mild green chilies. I don't think you can really go wrong with this recipe. This is another recipe from Foodguy that has become a favorite in just one making

    List of Ingredients




    1 ¼ lb. ground chuck
    1 onion, chopped
    1 clove garlic, minced
    1 (15 oz.) can diced tomatoes with juice
    1 (15 oz.) can whole kernel corn, drained
    ½ teaspoon salt
    2-3 teaspoons chili powder
    1 cup cornmeal
    1 cup milk
    2 eggs, beaten
    1 cup shredded cheese (Jack or Cheddar)

    Recipe



    Heat oven to 350 degrees
    In a large skillet cook and stir ground beef, onion and garlic until meat is browned. Drain off fat.
    Stir in tomatoes, corn and seasonings and heat to boiling.
    Pour into a 2 qt. casserole dish.
    Mix cornmeal, milk and eggs and pour over meat mixture.
    Sprinkle cheese over the top.
    Bake 50-60 minutes or until golden brown.
    Yield: 6 servings
