    ANNA'S PEACHES

    1 CUP CRISCO
    1 CUP SUGAR
    2 TBLS. FLOUR
    2 EGGS
    1/2 CUP MILK
    1 PACKAGE BAKING POWDER ( 3 1/2 tsp)
    1/4 TSP. BAKING SODA
    2-3 cups flour

    Mix the first 7 ingredients & let stand at least 1 hour. Then add enough flour to form a soft dough. Kneed slightly. Pinch of wallnut size pieces form into balls & bake until lightly browned. While the cookies are still warm scoop out some of the bottoms save crumbs.
    FILLING
    crumbs from cookies
    little rum
    peach jam
    sugar
    one egg white
    red food colour

    In one bowl place one egg white, in another some water & red food colour.
    To make filling add enough jam to the crumbs to make it smooth but not too wet. Add sugar to taste & rum.
    Fill the scooped out hole of one cookie mounding up the centre, Dip another cookie half that has no filling into the egg white press over the filling of the first cookie with your finger smooth the filling aroung the cookies & remove any that is too much. Dip your fingers in the egg white & lightly run them over the rest of the cookie, then dip your fingers into the food colour & run them over some parts of the peach to make it from dark pinkish red to light pink, leaving some parts plain. Roll in granulated sugar. Let air dry.

    This is a real pretty cookie but hard to expain how it is done. It freezes really well. If you have someone to roll it in the sugar for you it goes much faster & you don't get the sugar stuck to your fingers.
