    Caramel Dream Tassies

    1 (14 ounce) package caramels -- unwrapped
    3/4 cup evaporated milk -- divided
    1/2 cup butter
    1/2 cup shortening
    2/3 cup sugar
    1 teaspoon vanilla
    Ground nuts
    Tassie Shells:
    6 ounces cream cheese -- softened
    1 cup butter -- softened
    2 cups flour
    1/2 teaspoon salt -- optional

    Melt caramels with 1/2 cup milk in microwave or double boiler. Spoon into baked Tassie Shells about 2/3 full. In a small bowl, blend butter and shortening, mixing well. Set aside for 20 minutes. In another bowl, blend sugar, remaining 1/4 cup milk, and vanilla. Set aside for 20 minutes. Combine the two bowls into a large bowl. Using a mixer, whip on high until creamy. Spoon this frosting on top of caramel layer, sprinkle with ground nuts.

    Tassie Shells: Mix all ingredients well. Shape into 48 small balls. Place in tassie pans (miniature muffin pans). Press up sides gently. Bake at 350' until done. Cool and fill.
    (I roll the dough out & cut it with a 3" cookie cutter then place it in the muffin tins.)
    I didn't use the frosting instead I used the filling from the Fudge Cups posted by jcz04. I halved the recipe & then poured it on top of the cooled caramel filling. Then I beat some cream cheese & icing sugar & piped that on top of the chocolate layer with a star tip.
