SHAGGY KATE BARS
Dough
3 egg yolks
3 tbls sugar
1 1/2 sticks butter
2 cups four (I needed more)
1 pkg. baking powder
3 tbls. milk
Filling
2 cups +2 tbls finely ground
walnuts
3 egg whites stiffly beaten
2 cups icing sugar
apricot or rosehip jam
Cream the egg yolks with the sugar, add butter & milk mix in the flour. Kneed the dough & add more flour if needed. Divide dough in 3 parts. place one part into the freezer & freeze.
Roll one part to fit into the bottom of a 7x11 pan. Spread with jam. Roll out the second part & cover the jam. Spread with filling. On a grater grate the frozen dough over the filling. Make sure that the grater isn't too fine. Bake @350 for 40-50 min or until toothpick comes out clean & is lightly browned. Cool & cut into squares.
For the filling beat the egg whites till stiff then beat in the icing sugar & then fold in the walnuts.
RE;BAKING POWDER there is 3 1/2 tsp in the pack but I don't kow if it is the same strenght as the ones you buy in the cans.
