Dutch Country Chicken and Potato Dumplin

Serves 4.
2 tbsp. butter
1 pound boneless, skinless chicken thighs (or breasts) cut into eights
2 cups chicken broth (I used 2-1/2 c.)
1 pkg. (16 oz. blend of precut fresh broccoli, carrot and cauliflower (mine was 12 oz.)
1 pkg. (16 oz.) frozen potato gnocchi (mine was shelf stable)
1/4 tsp. poultry seasoning
1/4 cup instant mashed potato flakes
1/4 cup sour cream (can be soy)
Seasoned Salt to taste (my addition)
Recipe
Melt the butter in a large skillet over medium heat. Saute the chicken until lightly browned. Add the broth, bring to a boil, then simmer the vegetables, covered, for 5 minutes. Stir in the gnocchi, cover, and boil until the gnocchi are puffed and tender, about 3 minutes. I seasoned with seasoned salt now. Stir in potato flakes and simmer for 1 minute, or until the sauce is slightly thickened. Remove from the heat and stir in the sour cream.
