    Now this is groovy news! A few months back I got a letter saying they wanted to publish my recipe and would i send in a pic. so I did, and I got my copy in the mail today so if you get light and tasty you can see my mug on page 57! Here is the recipe, they have made a few changes. It was actually an old recipe that I streamlined and then they streamlined it a little more!

    Chicken Orzo Skillet

    1 cup uncooked orzo pasta
    1 lb boneless skinless chicken breasts, cubed
    3 tsp olive oil, divided
    3 garlic cloves, minced
    2 cans stewed tomatoes, (14.5 oz size) cut up
    1 can cannelini beans, rinsed and drained
    1 1/2 tsp italian seasoning
    1/2 tsp salt
    1 (16 oz) pkg frozen broccoli florets, thawed

    Cook orzo according to package directions. Meanwhile, in a large skillet coated with nonstick spray, cook chicken in 2 tsp olive oil for 6-7 minutes or until no longer pink. remove and keep warm.
    In the same skillet cook garlic in remaining oil until tender. stir in the tomatoes, beans, and seasonings. Bring to a boil, stir in broccoli and chicken; heat through, drain orzo and stir into chicken mixture.

    My notes: I use minced garlic from the jar, and also I have used the hunts italian flavored diced tomatoes and omitted the italian seasoning. I also have precooked the broccoli in the microwave and then just pop it in at the last minute before serving. you can use any small pasta with this, I have used small shells too.

    1 1/2 cups = 342 cal, 5 gms fat
