This is my favorite "Alternative" to plain old yellow potato salad, which my husband just adores. I must admit, I dont make this too often as it is a little time consuming, but its SO delicious! Maybe sometime, give it a try.
Marinated Potato Salad
Place 10 well scrubbed potatoes (I use one bag of red or yellow) and 1 1/2 tsp. of salt in large pot. Add water just to cover. Bring to a boil, reduce heat and simmer, covered until fork tender, 30-35 minutes. Let cool until you can handle, usually 20 minutes.
Marinade
1 1/2 tsp. salt
1 tsp. dry mustard
1/4 cup cider vinegar
1/2 cup salad oil
1/8 tsp. pepper (I add more)
dash of cayenne (I add more)
1/2 Cup chopped green onion
**I usually double the marinade when I make this. We really like the vinegar taste to it. I do NOT double the oil though**
Peel warm potatoes and slice or dice. Pour marinade over still warm potatoes. Toss gently, coat well. (marinade in the bottom will get soaked up, not to worry) Refrigerate 2 hours, tossing several times.
Mix in:
1 1/2 cups Mayo
1 cup chopped celery
1/2 cup sliced radishes
3 hard cooked egge chopped. (I add more)
Chill Well, and ENJOY!!!!
