Healthy Chili Soup
(dunno what else to call it, its the ingredients of chili, but thinner like a soup & I did not calculate the points, but it should be easy enough.) This makes a small pot, but it can very easily be doubled!
1 lb ground chicken
2 cans bush's black beans drained and rinsed
1 small can of tomato paste & 1 same can water
1 can of red gold petite diced tomatoes with chipotle (can use plain, I like it HOT)
1 can of chicken broth
1 onion diced
1 tbl garlic diced
salt and pepper to taste
1 tsp (roughly I didnt measure honestly) chili powder
1 tsp (Again didnt measure) Hot chili powder (Penzey's)
Brown ground chicken and break apart as its cooking. Add the garlic and onions and let sweat well. Add beans, tomatos, paste & water, S & P, chili powders, chicken broth, bring to a simmer, taste for seasoning re-season where necessary and let simmer for 20-30 minutes. I It is SO good
