Linguine with White Clam Sauce
List of Ingredients
- 1/2 stick butter
- 1/4 cup olive oil
- 1 cup chopped scallions
- 1 (8oz.) bottle clam juice
- 1 tomato , peeled , seeded and chopped
- 3 garlic cloves, minced
- 1 1/2 tsps. chopped fresh parsley
- 1/2 tsp. dried oregano
- 1/2 tsp. dried basil
- fresh ground pepper
- 1 pound fresh or frozen thawed clams, minced
- 1 pound fresh linguine
- 1/2 cup freshly grated parmesan cheese
Instructions
- Melt butter with oil in medium skillet over med. heat.
- Add green onion and saute 2 minutes.
- Add clam juice, tomato, garlic, parsley, oregano, basil and pepper and simmer 10 minutes.
- Add clams and continue cooking 2 to 3 minutes.
- Meanwhile, cook linguine accordingly.
- Toss altogether and sprinkle with parmesan cheese.
