    Pecan -Topped Sweet Potatoes

    List of Ingredients




    2 1/2-3 lbs. sweet potatoes or yams, cooked and peeled
    2 eggs
    3/4 cup brown sugar
    1/2 cup butter, melted
    1 tsp. salt
    1 tsp. cinnamon
    fresh squeezed orange juice- up to 1 cup (2 oranges)
    1 cup pecan halves or small bag of sm. marshmellows

    Mash sweet potatoes, beat in eggs, 1/4 cup of brown sugar,1/4 cup melted butter, salt and cinnamon. (If potates are dry, beat in orange juice) Put in 1 1/2-2 qt. casserole.
    (can be made ahead and refrigerated overnight) Before baking, arrange pecan halve on top and sprinkle with remaining 1/2 cup brown sugaar and 1/4 cup melted butter. Bake uncoverec at 375 degrees for 20 minutes or until heated. Serves 8
