    This recipe was passed down to me by my grandmother.


    List of Ingredients


    • 3 smoked ham hocks
    • 1 small bag navy beans
    • 1 large chopped onion
    • 1 small bag baby carrots chopped (may be left whole)
    • 4 to 5 chopped celery sticks
    • 2 cups chicken stock or 4 chicken boulon cubes
    • salt and pepper


    Instructions


    1. Soak beans overnite as package says. When beans are ready for cooking fill large pot 1/2 full of water. Add beans, ham hocks, chicken stock. Cover and cook over medium heat for 30 min. to an hour. Take ham hocks out and remove meat return meat to the beans. You may also add the rind to the beans for added flavor just remove rind before serving. At the same time add the chopped onion salt and pepper. Continue cooking covered ove low-meduim heat. When the beans are about 1/2 way done add carrots and celery. Continue cooking over low-medium heat until the vegies and beans are done.
    2. For added flavor you can add celery seed and Johnnys seasoning salt to desired taste.


    Final Comments


    Serve with warm biscuits or cornbread. This makes a great meal on a cold winters day. This is a very filling meal and will feed several.
