Pumpkin Roll

Grease 10X15" baking sheet. Place wax paper on bottom & grease. In a bowl, mix 3 eggs, 2/3 cup pumpkin, 1 cup sugar, 1t baking soda, 1/2t cinnamon, 3/4 cup flour. Pour onto baking sheet. Sprinkle 1/2 cup chopped walnuts on top. Bake @ 375 for 15 min. or until brown. Use lint-free towel. Lay flat & sprinkle w/confectioners sugar. Lay baked mixture (nutside down) on sugared towel. Roll longways tightly and let cool 1/2 hour. To make filling: Blend together 2T margarine, 8 oz. cream cheese, 3/4 t vanilla, 1 cup confectioner's sugar. Unroll cake & spread filling on cake. Roll back up in foil and place in freezer or fridge until ready to serve.
