4 egg yolks
1 cup milk
1 cup light cream
1 cup sugar
1/8 teaspoon salt
1-1/2 cup prepared mincemeat
2 tablespoon brandy or rum
1 teaspoon vanilla
2 cup whipping creamRecipe
In heavy 2 quart pan, beat egg yolks, blend in milk and cream. Stir in sugar and salt. Cook over medium heat stirring constantly till thickens and coats metal spoon. Place pan in bowl of ice water, stir till cold. Stir in mincemeat, brandy and vanilla. Whip cream to soft peaks. Fold egg mix into whipped cream. Turn into freezer trays, cover with plastic wrap and freeze.
