    2 cups old fashioned oats
    1-3/4 cup whole grain pastry flour
    1 teaspoon baking powder
    1/2 teaspoon salt
    1 cup brown sugar
    3/4 cup butter, at room temperature
    1 large egg
    1 teaspoon vanilla
    1/4 cup black rasberry all-fruit preserves
    1/4 cup apricot all-fruit preserves

    Recipe



    Mix dry ingredients.
    Place sugar and butter in large bowl. Beat at medium speed 3 minutes or till light and fluffy. Beat in egg and vanilla. Gradually beat in flour.
    Shape dough into 1 inch balls and place on greased cooky sheets. Dip your thumb in water and make an indention in center of each cookie.
    Spoon 1/2 teaspoon preserves in each cooky using black rasberry and apricot preserves.
    Bake 350 12 minutes or till lightly browned and firm to touch. Remove from sheet to rack to cool completely.

    PER COOKIE: 80 calories, 12 grams carbohydrate

    Makes 45 cookies
