Recipe Introduction


An old Irish Poem states:
Boxty on the griddle,
Boxty in the pan,
If you can't make boxty,
You'll never get a man.

So in case you're looking for a man, or not, here is a recipe for Boxty.





List of Ingredients



• 1/2lb. raw potato
  
• 1/2lb. mashed potato
  
• 1/2lb plain flour
  
• milk
  
• 1 egg
  
• salt and pepper
  






Instructions



1. Grate the raw potatoes and mix them with the cooked mashed potatoes.
   
2. Add salt, pepper and flour. Beat the egg and add to mixture with just enough milk to make a batter that will drop from a spoon.
   
3. Drop by tablespoonfuls onto a hot griddle or frying pan. Cook over a moderate heat for 3-4 minutes on each side. Serve with applesauce or with breakfast.
