    Hazelnut Pancakes with Strawberries

    List of Ingredients


    • 4 medium eggs
    • 4 1/2 oz half and half
    • 3T honey or sugar
    • 3 1/2oz roasted chopped hazelnuts
    • 3 1/2 oz plain flour
    • 1t baking powder
    • 1t ground cinnamon
    • pinch of salt
    • 3T melted butter
    • To Serve:
    • 6oz maple syrup
    • butter
    • 5oz strawberries


    Instructions


    1. Beat the eggs with the milk and honey or sugar until light and fluffy.
    2. Gradually add the hazelnuts, flour, baking powder, cinnamon and salt, then beat until batter is smooth.
    3. Heat a small, heavy based frying pan, then brush with 1/2t of melted butter.
    4. Drop in 2T batter, then quickly tilt the pan to cover the base. Fry for 1-2 minutes, until golden, turn over and fry for a minute longer until browned.
    5. Repeat until all the batter has been used greasing the pan as necessary.
    6. Serve the pancakes drizzled with maple syrup and topped with butter.
