Hazelnut Pancakes with Strawberries

List of Ingredients
- 4 medium eggs
- 4 1/2 oz half and half
- 3T honey or sugar
- 3 1/2oz roasted chopped hazelnuts
- 3 1/2 oz plain flour
- 1t baking powder
- 1t ground cinnamon
- pinch of salt
- 3T melted butter
- To Serve:
- 6oz maple syrup
- butter
- 5oz strawberries
Instructions
- Beat the eggs with the milk and honey or sugar until light and fluffy.
- Gradually add the hazelnuts, flour, baking powder, cinnamon and salt, then beat until batter is smooth.
- Heat a small, heavy based frying pan, then brush with 1/2t of melted butter.
- Drop in 2T batter, then quickly tilt the pan to cover the base. Fry for 1-2 minutes, until golden, turn over and fry for a minute longer until browned.
- Repeat until all the batter has been used greasing the pan as necessary.
- Serve the pancakes drizzled with maple syrup and topped with butter.
