Cranberry Pumpkin Bread

Toss Together and set aside:
1/2 cup frozen cranberries, halved
1 T. sugar
1 T. all-purpose flour
Combine Dry Ingredients:
2 cups all-purpose flour
1 t. kosher salt
1/2 t. baking soda
Whisk Together:
1 cup sugar
1/2 cup vegetable oil
2 eggs
Add to Wet Mixture:
1 cup canned pumpkin puree
1/4 cup buttermilk
1/2 t. vanilla extract
Fold Wet into Dry Mixture; Add:
1/2 cup pecans, chopped
Reserved cranberry mixture
Whisk Together For the Glaze:
1/2 cup powdered sugar
1 T. cream cheese
1 T. orange juice
1/2 t. orange zest, minced
Pinch of salt
Recipe
- Oven to 325
- Greased Loaf Pan
- Bake 65-70 minutes
