Summer Fruit Minestrone

2 cups OJ
1/4 cup sugar
1/4 cup lemon juice
3 ripe peaches, pitted and chopped
3 ripe nectarines, pitted and chopped
4 ripe plums, pitted and chopped
1 cup fresh blueberries
12 fresh mint leaves
Recipe
1. Combine the OJ, sugar, and lemon juice in a large mixing bowl and stir to dissolve the sugar.
2. Add the peaches, nectarines and plums and stir.
3. Refridgerate until cold, at least 1 hour.
4. Stir in blueberries and garnish with mint leaves.
