Creamy Pasta with Tofu

List of Ingredients
2 t. margarine or oil
1 onion, chopped
1 clove garlic, minced
1 T. parsley, finely chopped
3 t. flour
1 1/2 c. soy milk
1 t. salt (optional)
1/4 t. pepper
1/4 t. thyme
pinch cayenne
1/2 lb. firm tofu, crumbled
1 c. green peas
12 oz. pasta, cooked according to directions
Recipe
Sautee onion in margarine until golden, then add garlic. Cover and cook for about a minute. Stir in flour and cook briefly, then whisk in soy mild and cook until slightly thickened. Stir in remaining ingredients and heat thoroughly. Serve over pasta or rice.
