    3 pounds red potatoes
    12 oz. jar roasted sweet red peppers, drained and chopped
    1-2 green onions, sliced
    1/2 cup chopped fresh cilantro or parsely
    1/2 cup lime juice
    1/3 cup olive oil
    sale
    4 avocados, peeled and cubed

    Recipe



    - Cook potatoes in boiling salted water to cover 30 minutes or until tender. Drain. Cool to touch; peel potatoes and cut into cubes.

    - Combine potato, roasted red pepper, green onions, and cilantro in a large bowl. Whisk together lime juice and next three ingredients in a separate bowl; add avocado and toss. Add avocado mixture to potato mixture, and toss gently. Cover and chill.
