1 small onion, chopped
1 pressed garlic clove
2 T olive oil
45 oz. veggie broth
4 cups shredded fresh spinach
2 medium zucchini, cubed
1/2 t dried Italian seasoning
1/2 t salt
3-4 t freshly grated Parmesan cheese
6-8 toasted baguette slicesRecipe
- Saute onion and garlic in olive oil in a large Dutch oven until tender. Add broth and next 5 ingredients; bring mixture to a boil. Reduce heat, and simmer 10 minutes
- Sprinkle Parmesan cheese on each baguette slice and broil 3 minutes
- Serve with toast over soup
