2 medium russet potatoes, peeled and cut into 1 inch pieces
2 medium carrots, pared and cut into 1/2 inch slices
1 T olive oil
1 t basil, oregano
1 large zucchini, cut into 1/2 inch pieces
1 large red bell pepper, cut into 1 inch pieces
2 cloves minced garlic
2 cups 4 cheese blendRecipe
1. Place potatoes and carrots in greased baking dish. Drizzle with olive oil, sprinkle with spices. Toss lightly
2. Bake at 425 for 20 minutes. Add zucchini, red pepper, and garlic, stir veggies. Return to oven and bake 2 minutes or until veggies are tender.
3. Sprinkle with cheese, return to over for 2 minutes or just until cheese melts.
