4 lb. baking potatoes, peeled and quartered
1/2 c. olive oil
1/2 c. lemon juice
1T oregano
salt and pepper
Recipe
- Heat oven to 500
- Place potatoes in a baking dish
- Add all ingredients and toss until coated
- Add 1 cup of water and toss again
- Bake 50 min. - flip halfway through
