2 1/2 lbs. red new potatoes, quartered
1 T olive oil
6-8 cloves of garlic, minced
4 T butter at room temp.
2 t salt
Recipe
- Grease 8 inch baking dish
- Place potatoes in large stockpot, cover with cold water and bring water to a boil. Reduce the heat and cook uncovered until the potatoes are tender, 15-20 minutes.
- Meanwhile, heat the oil and garlic until brown, 5-10 minutes.
- Drain the potatoes. Using a fork, lightly mash the potatoes in a pan, being careful to leave some chunks. Mix in the garlic and oil, butter and salt. Transfer the mixture to the baking dish and bake at 450 12 minutes.
