Strawberry Cake
List of Ingredients
2 1/4 cups flour
1/4 tsp. baking soda
1/2 tsp. salt
1/2 cup corn oil
3/4 cups sugar
1 small package strawberry jello
3 eggs
3/4 cup buttermilk
1 10 oz. box frozen, sweetened strawberries, thawed
Recipe
In bowl, combine eggs, oil, sugar, jello and buttermilk. Mix well. Add dry ingredients and beat with electric mixer for 3 minutes. Drain 1/2 cup juice from frozen strawberries and reserve. Fold berries into batter. Pour into two greased and floured round cake pans. Bake at 350 for 25 minutes or til cake tests done.
Make icing of 1/4 cup butter, 1 box powdered sugar and reserved strawberry juice. Ice cake.
I don't remember where I got this recipe, but its good!
