    Lemon-cherry cheese bread

    If you think its hard adjusting recipies for high altitudes, try adjusting them for low fat too! This recipe is really easy and really good! My daughter says she likes it better than my poundcake, and that's saying a lot!

    List of Ingredients




    2 C flour
    1 t baking powder
    1 large box instant lemon pudding mix
    3/4 C sugar
    1/2 C dried cherries
    1 8 oz. box fat-free cream cheese
    1/2 C egg substitute
    1 T vanilla
    3/4 C evaporated skim milk
    1 T vegetable oil

    Recipe



    Cream together sugar,cream cheese, oil and pudding mix till fluffy. Add egg substitute and vanilla and beat well. In separate bowl, combine flour and baking powder. Add to mixture by thirds, alternating with milk. Fold in cherries. Bake in loaf pan (sprayed with Pam) at 350 for about 45 minutes or until tests done. Let cool 10 minutes on a rack and then turn bread out to finish cooling.
