Momma's Chicken Spaghetti
List of Ingredients
4 boneless chicken breasts, cut into chunks
2 cans chicken broth
2 stalks celery, finely chopped
1 large onion, finely chopped
2 T chopped garlic
2 cubanella peppers, seeded and chopped (or use bell peppers)
8 oz. mushrooms, sliced
1 can tomato soup
12 oz. spaghetti, broken
1 16 oz. can diced tomatoes
8 oz. cheddar cheese, grated
salt and pepper to tasteRecipe
In dutch oven, bring broth, soup, tomatoes, celery, onion, peppers, mushrooms and chicken to a boil. Cover and simmer until vegies are soft and chicken is tender, about 20 minutes. Add spaghetti and bring to boil again. Cook until spaghetti is al dente, about 10 minutes. Drain and place pasta, chicken and vegies in buttered casserole dish. Season with salt and pepper. Top with grated cheese. Bake at 350 for 20 minutes or until cheese is bubbly.
