King Ranch Chicken
List of Ingredients
6 chicken breasts
1 large onion, chopped
1 1/2 teaspoons chili powder (gebhart's)
1 can cream of chicken soup
1 can ro-tel tomatoes
1 package corn tortillas
2 cups grated cheddar cheese
1/2 teaspoon garlic salt
1 can mushroom soup
Recipe
Cook chicken in boiling water til tender. Bone and cut up chicken, reserving broth. Dip tortillas in hot broth for 5 seconds to soften. Place half of tortillas in baking dish. Layer with half of chicken and chopped onion. Repeat. Sprinkle with cheese, chili powder and garlic salt. Combine soups and spread over cheese and spices. Top with tomatoes. Bake at 350 for 45 minutes.
This is a common dish in south Texas. This is my version of it.
