Patti's Squash Casserole
List of Ingredients
6 crookneck squash, sliced
1 onion, chopped
2 T butter
2 C cheddar cheese, grated
1 pckg. Fritos (not the large ones)
salt and pepperRecipe
Boil squash until tender and drain. Mash squash and set aside. Saute onion in butter until soft. Add squash and cook on medium until all moisture evaporates. Season with salt and pepper. Layer squash, fritos and cheese in buttered casserole until all are used, ending with cheese. Bake at 350 until bubbly, about 20 minutes.
My daughters will even eat squash fixed this way!
