MEXICAN CHICKEN

List of Ingredients
- 1 Hen boned and cut in pieces (or 4 chicken breasts)
- 2 Tablespoons chopped onion
- Bell pepper to taste
- 1 Tablespoon chili powder
- 1 Tablespoon garlic powder (optional)
- 2 Cans Cream of Chicken soup
- 1 Can Cream of Mushroom soup
- 1 Can Rotel tomatoes
- Grated cheese (about 4 cups)
- 1 Large bag corn chips
Instructions
- Grease a large casserole dish (9 X 13) and cover bottom with chips that have been dipped in chicken stock. Layer the chicken, pepper, and onion. Cover with cheese. Mix soups, tomatoes, garlic and chili powder - Pour over chicken mixture. Top with more cheese and sprinkle with paprika.
- Bake at 350 degrees for 45 minutes.
