FRESH DILL POTATO SALAD

Recipe Introduction
Our favorite; even those who aren't crazy about potato salad love this one.
List of Ingredients
- 7 Cups sliced potatoes cut in disks (skins on)
- 1/2 Cup Italian salad dressing
- 1/2 Cup sour cream
- 1/2 Cup mayonnaise
- 2 Teaspoons horseradish
- 3 Green onions finely chopped
- 2 Tablespoons fresh dill
- Salt and pepper to taste
Instructions
- Cut potatoes in disks leaving skins on. Boil till tender. Rinse and drain. Put in bowl and coat with the Italian salad dressing.
Do this while they are still hot so as to absorb more flavor.
- Marinate in the refrigerator for a couple of hours.
- Drain salad dressing. Mix remaining ingredients together and fold into potatoes.
- Refrigerate till ready to serve.
Final Comments
I use red potatoes, prepared horseradish and regular onions if I don't have green on hand. Snip the dill with a scissors. Also, garnish the top with snipped dill.
