    Leave out tomatoes if freezing. Add tomatoes after defrosting.


    List of Ingredients


    • 2 10 oz frozen chopped spinach, thawed and drained
    • 1 8 oz cream cheese, softened and cut into small chunks
    • garlic to taste
    • cooking spray or butter for pan
    • 1/2 C. Italian Seasoned Bread Crumbs
    • 4 skinned, boneless chicken breasts
    • 2 t. olive oil
    • 4 slices mozzarella cheese
    • 1/4 t dried oregano
    • 8 thick slices fresh tomato (peel tomato skins off tomato)
    • 1/4 c. grated fresh parmesan cheese
    • 1/4 - 1/2 t. basil to taste


    Instructions


    1. Preheat oven to 350. 30 min.
    2. Combine spinach and cream cheese. Press spinach mixture into bottom of 13X9 dish coated w/cooking spray or butter.
    3. Place bread crumbs in shallow dish.
    4. Cut chicken breast in half horizontally to make 2 cutlets. Dredge chicken in bread crumbs.
    5. Heat oil in large non-stick skillet over medium-high heat. Add chicken, cook 2 min. on each side or until lightly browned.
    6. Arrange chicken over spinach mixture.
    7. Place mozzarella cheese on top of chicken and sprinkle with oregano then grated paremesan.
    8. Place cut tomato slices on each chicken. Sprinkle basil on tomato slice.
    9. Bake 30 min.
