TEXAS FRESH APPLE CAKE

List of Ingredients
- 2 C. flour
- 1 t. baking soda
- 1/2 t. salt
- 1 t. cinnamon
- 1 1/4 C. oil
- 2 C sugar
- 3 eggs
- 2 t. vanilla
- 3 C. grated apple
- 1 1/4 C. chopped pecans
- 6 T. unsalted butter
- 2 T. milk
- 3/4 C. brown sugar
- 1/2 C. coconut
- 1/2 C. chopped pecans
Instructions
- Combine flour, soda, salt and cinnamon in a small bowl and set aside.
- In a large mixing bowl, beat oil and sugar together until well-blended. Add eggs and beat until eggs are totally incorporated and mixture is a light-lemon color.
- Mix in vanilla, then add flour mixture, grated apple and pecans. Mix well.
- Pour into a 10 in. springform tube pan or a bundt pan that has been sprayed with oil.
- Bake for 50-55 min. at 350 degrees. Cake is done when toothpick inserted in center of cake comes out clean.
- When cool, remove from pan, place on serving tray and top with topping.
- For Topping - Combine butter, milk, brown sugar, coconut and pecans in a medium saucepan. Bring to a boil and boil for 1 minute.
- Pour over top of cake and allow to cool before serving.
