SALAD:
mixed greens
shredded cabbage (Napa cabbage is good)
pea pods
mandarin oranges
green onions
TOPPING:
toasted almonds, peanuts or crispy Chinese noodles
shredded cooked chicken or shrimp (optional)
Asian-Style Salad Dressing
� cup oil (I use peanut or sesame oil)
6 T. rice vinegar
1 T. finely chopped onion
1 � T. creamy peanut butter
� cup sesame seeds, toasted
� cup sugar (I use honey)
1 tsp. salt
1 tsp. cayenne pepper (optional, but good!)
� tsp. cracked black pepper
� tsp. ginger (I use fresh grated to taste)
Recipe
In a jar with a tight-fitting lid, combine all ingredients;
shake well. Store in the refrigerator.
