    TROPICAL FRUIT APPETIZERS

    1 mango
    1 papaya
    1 pineapple
    2 bananas
    1/4 - 1/3 cup fresh lemon juice

    frilled toothpicks
    1/2 cup sour cream
    2 teaspoons coconut liqueur or coconut cream
    1/4 cup shredded coconut
    2 teaspoons dark corn syrup
    1 teaspoon fresh lemon juice
    (1 tsp rum, optional)

    DIRECTIONS:

    Preparation:
    Peel fruit and cut into chunks.
    Sprinkle pared fruits with 1/4 - 1/3 cup fresh lemon juice. Skewer pieces of fruit with toothpicks and arrange onto a serving platter. Set aside.
    Combine sour cream, coconut liqueur or coconut cream, corn syrup, and 1 tsp lemon juice (and rum, if using). Mix well. Add more lemon juice or corn syrup to taste if desired.
    Spoon into a shallow bowl. Serve fruits chilled, with dip on the side.

    Serves: 10
