    Thai Coconut Iced Tea
    Makes 2

    Ingredients:
    2bags jasmine tea
    2cups boiling water
    1cup light coconut milk
    2packets no-calorie sweetener or 2 tablespoons sucralose-based sugar substitute, divided


    Preparation: 1.Brew 2 cups jasmine tea with boiling water according to package directions; cool to room temperature.
    2.Pour 1/2 cup coconut milk into each glass. Stir 1 packet of sweetener into each glass. Add ice; carefully pour half of tea into each glass. Serve immediately.

    Tip: For a more dramatic presentation, gently pour tea over the back of a spoon held close to the surface of the coconut milk in each glass. The tea will pool in a layer on the coconut milk before blending.
