Strawberry Cream Cheese Muffins
Ingredients:
3 ounces cream cheese
3/4 cup strawberry jam
2 cups flour
3/4 cup sugar
1 cup milk
6 tablespoons unsalted butter
1 teaspoon vanilla
2 1/2 teaspoons baking powder
1/2 teaspoon salt
2 eggs
Topping:
1/3 cup graham cracker crumbs
1/2 cup sugar
1/4 cup butter, cubed
1 1/2 teaspoons cinnamon

Strawberry Cream Cheese Muffins
Directions:
Preheat oven to 400 degrees. Grease muffin tins or line with paper cups. To make crumb topping, combine topping ingredients in a bowl. Use a fork or pastry cutter to mix together. Set aside.
In saucepan, combine milk, butter, and vanilla. Stir over medium heat until butter melts. Cool until warm to touch, then beat in eggs. In large bowl, combine flour, baking powder, salt, and sugar. Add milk mixture and stir just to blend. Cut cream cheese into 12 equal pieces. Spoon about 1/2 batter into muffin cups filling about 1/3 full. Spoon about 1 tablespoon of jam on top of batter. Top with 1 piece of cream cheese. Spoon remaining batter over jam and cheese, filling each muffin cup about 2/3 full. Sprinkle each muffin with about 1 tablespoon of graham crumb topping. Bake about 20 minutes or until top springs back when lightly touched. Makes 12 muffins.
